LAWLESS JERKY is about bravely deviating from “the path” in an effort to find one’s happiness.
Matt, a licensed attorney who realized that practicing LAW made him LESS happy, created LAWLESS JERKY.
Since college, when he and several fraternity brothers pitched in to buy a cheap, plastic dehydrator, jerky making was a tasty outlet for Matt’s creative side. Not unlike early American pioneers in the Wild West, who possessed little but a passion for adventure, Matt embarked on a mission to turn the craft of jerky making into his livelihood.
At first, Matt sold jerky to friends and family members as he honed his recipes.Working out of a one-room studio apartment by the beach, Matt filled his home with dehydrators, which emanated an aroma of sweet, of spice, and of meat. He experimented with ingredients sourced from near and far, determined to produce an artisan, small-batch jerky fit for one and all.
Matt’s early experiments included some serious pitfalls, like the immediately retired lemongrass jerky, the ill-conceived parmesan-crusted BBQ jerky, and jerky made of ground beef (instead of steak).
In the end, Matt found truth in his roots. Inspired by the barbeque of North Carolina where he went to college and by curries that his Japanese friends shared with him in Los Angeles, American BBQ and Japanese Curry were born. In the world of LAWLESS JERKY, East meets West in loving bliss.
